Angel hair pasta goes really very well with seafood. This gorgeous looking thin pasta absorbs quickly the flavours of sauce and hence gives the experience of a well incorporated main course full of flavours and textures. The beauty of this dish is it takes a very few simple ingredients, which are easy to find and cook in no time. Also, it has vegetables too, which makes this dish rich in vitamins. So, here is a quick and easy recipe for Angel Hair Pasta in Seafood Sauce.
Ingredients
- 200 gms or 1/2 packet Barilla or any other angel hair pasta
- 20 uncooked shrimps
- 6-8 jumbo sea scallops
- 1 cup grated parmesan cheese
- 1-2 cloves of garlic
- 1/2 tsp dry basil
- 1 tsp red chilli flakes
- 1 cup mixed vegetables (frozen and then thawed so that they cook fast) - diced carrots, brocolli florets and sweetcorn
- 1/2 cup melted butter
- 2 tbsp oilve oil
- water
- salt and pepper
Directions
1. Take the shrimps out of their shell and remove the dark dorsal vein carefully. Also take the heads and tails off completely. Wash the shrimps and scallops and drain.
2. Sprinkle salt and pepper over the seafood and set aside for 5-10 minutes.
3. Cook the pasta in water as per the directions on the packet.
4. While the pasta is cooking, drizzle olive oil on a non-stick grilling pan and heat the pan to medium.
5. Arrange the shrimps and scallops in a single layer and cook for 3 minutes on each side, without touching in between.
6. Drain the pasta and place in a large mixing bowl. drizzle some olive oil and coat the pasta gently with the oil and set aside.
7. Remove the seafood from grill and place on a paper towel.
8. Heat 1/2 of the butter in a pan and add little crushed garlic cloves.
9. Add basil and stir.
10. Add vegetables and stir for 2 minutes over a high heat so that the vegetables get the smokey flavour.
11. Add salt and pepper and mix well.
12. Toss the seafood in and mix everything well.
13. Pour the hot seafood sauce over the pasta and quickly mix everything together
14. Add 1/2 of the parmesan while the pasta is nice warm and sprinkle chilli flakes and mix well.
15. Transfer the pasta to an attractive serving dish and garnish with remaining parmesan
16. Serve warm with toasted garlic bread and fresh salad.
Note - For making fresh salad, mix cherry tomatoes, sliced red onions, red and orange bell peppers, handful of fresh spinach leaves and 8-10 black olives in a large mixing bowl. Mix some olive oil, toasted sesame seeds, some orange juice, 1 tsp of honey mustard, salt and pepper in a separate bowl and whisk together. pour this dressing over the salad and serve. Place croutons if desired.
